Tabasco Avery Island Limited Edition Reserve Hot Sauce (5 FL.OZ. / 148 ml): Every year, a selection of the finest Tabasco peppers grown on Avery Island are hand-selected by members of the McIlhenny family for their superior color, texture and robustness. These peppers are then blended with pure Avery Island salt and fine vinegar, aged three years in oak, and bottled as a small-batch Tabasco (R) pepper sauce that has traditionally only been available only to McIlhenny family members and close family friends. In 2008, for the first time and only time, on the occasion of the 140th anniversary of the first bottling of Tabasco sauce, a limited edition of 5,000 bottles of this Avery Island Reserve was made available to the public. Within a very short time all bottlers were sold out and now the only available bottles are in the hands of private collectors. From time to time HotSauce.com procures some of these very rare Tabasco Avery Island Reserves in their pristine and unopened condition. Each bottle is sealed in its unopened silver box and shipped securely. What makes it so special? "Avery Island Reserve is aged and processed the same as original Tabasco Sauce," says Paul McIlhenny, president and CEO of McIlhenny Company. "The difference is that it's made from just the finest Avery Island peppers that are hand-selected by McIlhenny family members. Because these peppers are at their peak ripeness - fiery in color and heat - the Reserve is noticeably brighter in color and heat." Gretchen VanEsselstyn, Editor in Chief of Chile Pepper Magazine, describes Tabasco Avery Island Reserve: "The Avery Island Reserve sauce has many of the characteristics of classic Tabasco: a depth of full, round pepper flavor, the almost wine-like complexity that comes from aging, a clean after burn, and a good balance of acidity and salt. Yet, in many ways, it's like Tabasco with the volume turned up - more concentrated, more robust. The flavor comes on quicker and it has both more sweet pepper flavor and more tart-tangy acid. To my palate, it's also about 50 percent hotter. All in all, it's a very refined, fresh-tasting sauce with a killer kick."
