Flavor, Heat...
I look for sauces that have both flavor and heat, with a balance. This sauce has a really flavorful start, tangy, tart, with a later onset of strong but not uncomfortable heat. Mostly at the back of the palate, not so much on the front of the tongue or lips. Good stuff! I’d toss wings in this and be really happy.
