The Sauce

The pulpy body of this thick sauce is that of corn syrup colored like smashed baby peas. But when you get passed it's horrific fluid qualities you find two distinct qualities. The first is it's tangy veggy flavor coming from the combination of salt, vinegar, chayote pulp (chayote is latin member of the squash family, rich in amino acids and vitamin C), lemon juice and citric acid. Tasty yes, but a bit more like a smoothie than a sauce.
The second quality is it's apparent lack of heat. If you have built up any tolerance to naturally occurring heat, you won't get off to this sauce. I estimate it's (SHU) rating to truly be around 6000 units.
Recommendation. Low. Suited more to those who are only first getting into chili's and have extreme sensitivity to heat.
